Recipe: Cut-Out Cookies

Cut-Out Cookies

...a delicious, "no-fail" cut-out cookie (and icing). Enjoy...

1/2 cup margarine, softened
1/4 cup shortening
1 cup granulated sugar
1 tsp vanilla extract
1 tsp almond extract
2 eggs
2 1/2 cups all-purpose flour
1 tsp salt
1 tsp baking powder

Blend ingredients together and chill for 1 hour. Roll dough on floured board to 1/4-inch thickness. Cut out cookies and place on ungreased cookie sheet. Bake at 400F for 6-8 mins.

ICING
1/3 cup margarine, softened
1 tsp vanilla extract
2 egg whites
1 lb confectioner's sugar

Cream together margarine and vanilla. Alternately add the egg whites and confectioner's sugar, beating until smooth. Add a small amount (~1 tsp) of milk if icing is too thick. Spread icing on cookies, then set cookies aside until icing hardens. Makes enough to ice a double batch of the cut-out cookies.
