Recipe(tried): Cinnamon Apple Jelly
Misc.I haven't tried cinnamon apple butter, but this jelly is wonderful! it is a beautiful, bright red color and a welcome addition to Christmas baskets.
Candy Apple Jelly
5 1/4 c. apple juice
3/4 c. red cinnamon candies
6 c. sugar
1 box powdered pectin
1/2 tsp. Butter
Pour apple juice and candies into large (at least 8 qt.) saucepot. Slowly stir in pectin. Add butter. (For this jelly, you need to use a wooden or unmeltable plastic spoon. It is important to stir constantly, or the candies will burn onto the bottom of the pan.) Bring to a full, rolling boil over medium high heat, stirring constantly. When mixture comes to a boil, add sugar all at once. Return to a full, rolling boil, stirring constantly. Boil, stirring, for one minute. Remove from heat. Skim foam with a metal spoon. Pour jelly into a pyrex measuring cup. Pour into prepared jars, leaving about 1/4 inch head room. Seal and boil 5 minutes.
Yield: about 10 cups
