Recipe: Cinnamon Candied Cucumber Rings

Hi,

Here is a recipe I found in my files. I'm sure that I must have found it on the Internet somewhere...unfortunately I didn't document the source.

Hope this works out for you.

Cinnamon Candied Cucumber Rings (sticks)

7 large cucumbers
1 gallon water
1 bottle red food coloring
1 TBSP alum
10 cup sugar
1 pkg. red hot candies
1 cup lime
3 cup white vinegar
2 cup water
8 sticks cinamon

Peel and slice cucumbers into 1/4 slices. Soak overnight in lime and 1 gallon water. In morning drain and soak 4 hours in clear water. Remove centers. Combine 1 cup vinegar, food coloring, and enough water to cover cucumbers. Heat and simmer 2 hours. Make syrup of 2 cups vinegar and water,
sugar, cinnamon sticks, and red hots. Bring to boil. Drain cucumbers and pour syrup over rings. For next 3 days drain syrup off and heat to boiling. Pour over rings. On 3rd day, heat and place in jars and seal.

This can be processed in a simmering hot water bath at 170 to 180 degrees F. for 10 to 15 minutes/quarts depending on altitude.
