CITRUS AND AVOCADO TOSS UP
Here is a winning combination of juicy sweet oranges, buttery avocados, and crisp onion rings tossed with a tarragon-flavored dressing. It goes well with any entree but is especially good with seafood.
FOR THE TARRAGON-SESAME SEED DRESSING:
1/2 cup vegetable oil
3 tablespoons white wine vinegar
1/2 teaspoon dried tarragon
2 teaspoons sugar
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1 tablespoon toasted sesame seeds*
FOR THE SALAD:
8 to 10 cups torn red leaf lettuce
1 white sweet onion, thinly sliced and separated into rings
2 avocados, peeled and sliced
2 oranges, peeled (white pith removed), cut into bite-sized pieces, drained
TO MAKE THE TARRAGON SESAME SEED DRESSING:
In a small bowl, whisk together all ingredients for the dressing. Makes about 1/2 cup
TO MAKE THE SALAD:
In a large salad bowl, combine lettuce, onion, avocados, and oranges and toss with enough dressing to coat. Serve immediately.
*To toast sesame seeds, put them in a small nonstick skillet over medium-high heat and stir until golden, about 2 minutes.
Servings: 6-8
