This is the recipe everyone asked by mother to make for all the church socials.

Claxton Coconut Cream Pie

4 egg yolks
1 cup sugar
1 1/2 Tablespoon flour
1 1/2 cups evaporated milk
1 1/2 coconut
1 cup sweet milk
2 Tablespoons butter
1 teaspoon vanilla

Mix sugar and flour until smooth. Add egg yolks and milk. Beat until eggs and thoroughly blended. Add vanilla and 1 cup of coconut. Cook until mixture thickens. If too thick, add more cream and milk. Pour into baked 9 inch pie shell.
Top with 4 egg whites beaten stiff, slowly adding 8 Tablespoons sugar while beating. Add 1 teaspoon vanilla near last of beating. Beat until whites hold to a spoon. Spread on pie. Sprinkle with remaining 1/2 cup coconut. Bake at 325 degrees for 20 minutes, watching carefully as top browns.
