Recipe: Clothespin Cookies

4 cups flour
2 tablespoons sugar
1 teaspoon salt
1 1/2 cups Crisco (vegetable shortening)
3 egg yolks
3/4 cup warm milk
1 package instant dry yeast

Mix together the flour, sugar, salt and Crisco. Dissolve the yeast in the warm milk for about 5 minutes then add to the slightly beaten egg yolks. Mix the yeast mixture with the flour mixture. Dough will be soft. Divide into 5 portions. Wrap each in plastic wrap and refrigerate for at least one hour.

Roll out dough on board using powdered sugar and flour mix sprinkled on board. Cut in 2" squares. Roll each square around a clothespin that has been wrapped with aluminum foil (or you can use cannoli forms).

Bake at 350 degrees F. for 8 - 10 minutes or till lightly browned.

Remove from the forms after cooled. Twist a bit on the form before pulling off the end that is smaller.

Makes about 10 dozen

FILLING:

1 pound powdered sugar
1 cup Crisco (vegetable shortening)
1/2 cup margarine (softened)
1/8 teaspoon salt
1/2 cup milk
2 teaspoons vanilla

Combine all ingredients and mix with mixer till fluffy.

Fill each cookie with filling using a pastry bag.

(I usually have to add about 3/4 cup more powdered sugar, and I also add 1/4 teaspoon almond extract to the filling)
