COCONUT ANGEL FOOD CAKES
6 ounces cake flour
18 ounces granulated sugar, divided use
18 ounces egg whites
1 1/2 teaspoons cream of tartar
pinch of salt
1 tablespoon coconut extract
1 tablespoon coconut milk
Sift together flour and half the sugar.
In a mixer, whip whites with cream of tartar. When foamy, start gradually adding the other half of the sugar. Whip to soft peak.
Fold the flour-sugar mixture into the egg whites.
Fold in the extract and coconut milk. Spoon batter into desired molds.
Bake at 300 degrees (convection oven) for approximately 45 minutes.
