Recipe: Ham Balls in Sour Cream Sauce (using leftover ham, 1960's)

Main Dishes - Pork, Ham
HAM BALLS IN SOUR CREAM SAUCE

1/4 cup finely chopped onion
3 tablespoons butter
1 pound ground cooked ham
1/2 cup soft bread crumbs
1/4 cup milk
1 slightly beaten egg
1 tablespoon chopped fresh parsley
Dash of ground black pepper
1 tablespoon flour
1 cup dairy sour cream
1/2 cup water
Hot cooked rice (optional, for serving)

Cook onion in butter till tender.

Remove onion and combine with ham, bread crumbs, milk, egg, parsley and pepper.

Shape into 1 1/2-inch balls; brown on all sides in remaining butter. Place on warm platter.

Remove skillet from heat. Blend flour into butter; add sour cream and 1/2 cup water. Cook over low heat till smooth. Serve sauce over ham balls. Serve over rice, if desired.

Makes 4 servings
