Recipe: Collard and Sausage Soup (using canned collard greens)

COLLARD AND SAUSAGE SOUP

1 (27 oz.) can Glory Foods Seasoned Collard Greens
1 tbsp. olive oil
1 cup yellow onion, diced 1/4-inch
2 cloves garlic, minced
2 potatoes, peeled and diced 1/2-inch
2 cups chicken stock
1/2 pound italian sausage, cooked, sliced 1/4-inch

Place the olive oil in a sauce pan over a low flame. Add the onions and garlic, and cover. Cook until translucent and stir occasionally, be sure not to allow the onions and garlic to burn.
Add the potatoes and the remaining ingredients. Simmer for 15 to 20 minutes or until the potatoes are tender. Serve hot.

Servings: 10-12
