I have not tried to color sugar cubes, but have colored regular sugar by adding food coloring (wilton's) to the sugar and massaging it in. I would try adding food coloring to vodka (dries quickly) and dipping the cubes in it, place them on a rack, and let them dry. You would not be out much expense. If you did not want to use rum or vodka, try it with water.
