Recipe: Cilantro-Lime Potatoes with Garlic Butter

CILANTRO-LIME POTATOES

2 pounds medium-size new potatoes, washed and quartered
2 tablespoons butter
3 tablespoons olive oil
4 large cloves garlic, minced
4 tablespoons fresh lime juice
2 teaspoons coriander seeds, freshly ground
1 bunch scallions with some tops, chopped
3/4 to 1 cup fresh cilantro leaves, coarsely chopped
1 tablespoon pure mild chili powder
Salt and freshly ground pepper
1/4 cup shredded Parmesan cheese (for serving)

Cover potatoes with cold salted water and bring to a boil; reduce heat and simmer until tender, about 12 minutes, but do not overcook.

Meanwhile, in a small saucepan, melt butter and olive oil with garlic, lime juice and ground coriander.

Drain cooked potatoes and toss gently with garlic butter, adding chopped scallions, cilantro, chili powder, salt and pepper.

Serve warm or at room temperature, generously sprinkled with shredded Parmesan.
