PEAS AND SHELL MACARONI
1/4 cup butter
1/4 cup olive oil
1 onion, minced
1 clove garlic. minced (optional)
1/2 pound shell macaroni, cooked and drained
3 cups cooked peas
1 cup chopped fresh parsley
1/2 cup cooked ham, diced fine (optional)
Grated Parmesan cheese
Salt and pepper
Heat butter and oil. Saute onion and garlic in it until onion is soft.
Add other ingredients, except cheese, seasoning to taste with salt and pepper. Simmer, covered, 10 minutes.
Serve with cheese, (This dish is also served without the cheese in Italy.)
Makes 4 to 6 servings
