Recipe(tried): Confetti Rice

CONFETTI RICE

1/2 lb bacon
1 cup long grain rice, cooked
1 cup diced carrots, parboiled
1 cup diced celery, parboiled
1/2 cup fresh or frozen peas
soy sauce (optional, for serving)

In a large skillet, cook the bacon until crisp. Remove to paper towels. Drain all but 3 tbsp of the drippings from the pan.

Cook the rice, carrots, celery and peas in the drippings until heated through, about 5 to 7 minutes.

Stir in the bacon. Serve with the soy sauce if desired.

Makes 6 servings
