CHOCOLATE FROSTING

Place in a saucepan and stir until the sugar is dissolved:
1 1/2 cups sugar
1 1/2 cups water
Cover and cook 3 minutes or until the steam washes down any crystals that may have formed on the side of pan.
Uncover and cook without stirring to 238 to 240 degrees F. At this temperature if dropped in bowl will form a soft ball.
Remove from heat and Add:
1 dozen large marshmallows that have been cut into eighths
2 oz. grated chocolate
Permit these ingredients to stand until the mixture no longer bubbles.
Add:
1/8 teaspoon cream of tartar
Meanwhile whip together until stiff but not dry:
2 egg whites
1/8 teaspoon salt
Pour the syrup over the egg whites in a thin steam, whipping constantly, until the icing is of the right consistency to be spread.
