Recipe(tried): Corn Fritters

Corn Fritters

1 3/4 cups flour
2 tsps baking powder
3/4 tsp salt
1 egg, beaten
3/4 cups milk
1 cup whole kernal corn, drained if canned
1 tbls melted butter
Melted shortening for frying
Maple syrup (optional)

Ina large bowl, sift together flour, baking powder and salt. Set aside. Ina small bowl, combine egg, milk, corn and butter. Add wet ingrediants to dry ingrediants and stir until just combined. Melt shortening (to one0inch in depth) in skillet. Drop spoonfuls of batter into hot shortening and fry for 4-5 minutes, turning once, until fritters are golden brown and cooked through. Drain on paper towels. Serve with maple syrup if desired.
