Recipe(tried): Corn Pudding

Side Dishes - Vegetables

Hi Judy

This is my recipe. It's sweet and creamy. Very good and always served at holidays.

Corn Pudding

2 cups white corn or 1 qt freezer bag
2 eggs
1 cup sugar
1 cup milk
Pinch of salt
2 tbsp flour
1/2 stick butter or margarine

Combine eggs, sugar, milk, salt and flour. Stir in corn. Mix well. Pour into 8 x 8 casserole dish. Cut butter up and place on top of mixture. Bake at 350* for approximately 45 minutes..or until mixture no longer shakes in dish.
NOTE: More milk may be added if needed to get right consistency. Pudding will be like a custard when done. I use Silver Queen corn that we grow. Recipe can easily be doubled for a 13 x 9 dish and increase time of cooking slightly.
