Recipe: Candied Cranberries (1940's)

CANDIED CRANBERRIES

Candied cranberries make an attractive garnish for a cookie or candy box.

1 cup large fresh cranberries
1 cup granulated sugar
1 cup water

Select and wash one cup of large, perfect cranberries. Pierce each one several times with a needle.

Combine 1 cup sugar and 1 cup water in a saucepan. Cover and boil for 3-minutes.

Remove cover and boil to soft ball stage (238 degrees F) without stirring.

Remove from heat, add berries and leave in syrup for 3 to 5 minutes or until translucent. Drain the berries. Drop on waxed paper and allow to dry.

When nearly dry, roll in granulated sugar.
