Recipe(tried): Cornish Hens

Here's a recipe for Cornish hens that has worked well

1 hen, split
1 lemon
3 TBSP unseasoned bread crumbs or cracker crumbs
2 TBSP grated Parmesan cheese
1/4 tsp ground ginger
salt/pepper to taste

Sprinkle poultry with juice from 1/2 lemon
Combine crumbs, cheese, ginger, s and p and put into
a bag.
Add poultry and shake till coated well
Place poultry skin-side-up on shallow roasting pan
Place in preheated 350 oven
Bake without turning, till golden brown (45-50 mins)
Garnish with thin lemon wedges
Serves 2 (recipe may be doubled/tripled)

We have Cornish hens often, especially in the summer when we can grill them outside. Oftentimes, we simply rub them with olive oil; fill theinner cavity with a rice/feta cheese/lemon juice mixture, and place on grill, cooking till done. You can add pine nuts to the stuffing mixture if you wish. Easy and no mess to clean up, as there usually is in the stove!!
