SEAFOOD SKEWERS
Source: Hooked on Fish on the Grill by Karen Adler
1/2 pound scallops
1/2 pound king prawns or jumbo shrimp, shelled and deveined
Grated zest of 1 lemon
Juice of 1 lemon
Juice of 1/2 orange
3 Tablespoons orange liqueur
Combine all ingredients in a bowl and marinate for 1 to 2 hours in the refrigerator. Remove seafood and reserve liquid for basting*.
Thread scallops and prawns alternately onto 4 skewers.
Grill, basting frequently with reserved marinade until just cooked, approximately 6 to 8 minutes.
Servings: 2
*Boil reserved marinade for a few minutes before using for basting.
