Recipe: Crabby Potatoes (low fat)

Crabby Potatoes (low fat)

1 1/2 lb red new potatoes
1/4 lb crab meat
2 tbsp chives -- minced
1 tbsp parsley -- chopped
1 tsp olive oil
2 tbsp nonfat mayonnaise
2 tbsp nonfat yogurt
2 tsp lemon juice
3 tbsp parmesan cheese

Bake potatoes in a 350 degree oven until tender (30-45 min). Let cool. Cut into quarters.

In a bowl, combine all other ingredients. Stir in potatoes. Place into a shallow baking dish.

Broil 4-inches from heat until golden. Serve hot.
