CREAMED CHIPPED BEEF

Ingredients (8 servings)

1 Jar of Dried Beef, chopped Small
2 Hard boiled eggs, chopped
2 c Milk
1/4 c Flour
1/4 c Butter or margarine
Pepper to taste (usually the salted meat is sufficient
for salt)

Instructions

Make a white sauce by melting the butter in a double
boiler or heavy pan, stirring in the flour and adding the
milk gradually.

Cook, stirring constantly to the thickened sauce. Add
pepper and check for salt. Adjust if necessary.

Served over toast or toasted English Muffins. This will
make enough sauce for about 6-8 muffin halves,
depending on how generous you are with the sauce.

Chipped beef--very thin slices of salted, smoked, beef
packed in glass jars--has long been an essential part
of the American pantry. So says my "joy of Cooking
(cookbook). The chipped beef (cured) has a
distinctive flavor. You really can't make an authentic
"chipped beef" dish with fresh meat.

The recipe:
1 (5-ounce) jar dried beef,chopped
2 Tablespoons butter or margarine, melted
4 1/2 cups milk, divided
1/2 cup all-purpose flour
1 teaspoon beef-flavored bouillon granules
1/2 teaspoon salt
1/4 teasppom white pepper
Toast
Or, 8 commercial frozen puff pastry shells, baked

Saute beef in butter in a large skillet 1-2 minutes.
Stir in 3 1/2 cups milk; simmer 2 minutes. stirring
often. Combine flour and bouillon granules in a small
bowl; gradually stir in remaining 1 cup milk. Gradually
stir flour mixture into beef mixture. Cook over medium
heat, stirring constantly, until thickened and bubbly
(you don't want lumps. Stir in salt and pepper. Spoon
mixture on toast and serve.

Southern Living (1992)

My version was: simply make a basic white sauce --
doctor it up with salt, pepper and beef bouillon
granules. Chop your chipped beef, add to white sauce
and simmer for a few minutes.

I mostly served it on toast but sometimes on waffles
or biscuits.

I make this all the time. My kids love it
4 tbsp butter
4 tbsp flour
2 cups hot milk
1 pkg chipped beef cut into strips
salt and pepper to taste

In med. size pot, melt butter and stir in flour. Cook
over med-low heat for about 2 min, until smooth,
white paste. Add hot milk gradually and cook, stirring
constantly for about 3-4 min. or until smooth and
thickened. Stir in beef salt and pepper, stirring
constantly until heated through. Serve immediately
over toast or biscuits. Serves 4
We usually have this for breakfast. The way I serve it
is to take 2 peices of toast put a fried egg on top of
each piece of toast and pour some gravy on top of it.
