Crispy "Cream of Wheat" Coating
for Shrimp, Flounder or Salmon

1 cup cream of wheat -- not instant type
2 teaspoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon white pepper -- fresh ground

This recipe proves that Cream of Wheat isn't only baby food. Kunz's Cream of Wheat cereal coating produces an incredibly crispy cornmeal-like crust for seafood.

In a small bowl, mix the Cream of Wheat with the salt, cayenne and wheat pepper.

The coating can be stored at room temperature in an airtight container for up to 1 week.

Use this coating for shrimp or white-flesh fish fillets such as flounder, or oily fish, such as salmon; then pan-fry or deep-fry them in vegetable oil.
Yield: 1 cup
