Recipe: Quebec Salmon Pie (1976)

QUEBEC SALMON PIE

'In rural Quebec this version of shepherd's pie is a family favorite. Some recipes do not call for the addition of a pastry top."

Preheat oven to 400 degrees F. Grease individual casseroles or a 9-inch pie plate.

Drain, flake and crush bones from 1 can (15 1/2 ounces) salmon (or flake sufficient cooked fresh salmon to give 2 cups flaked salmon)

Combine:
2 1/2 to 3 cups mashed potatoes
1/2 cup finely chopped onion
3 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon savory
pinch of pepper

Place half the potato mixture in bottom of prepared casseroles. Cover with salmon. Top with remaining potato.

Prepare sufficient pastry and cover casseroles or pie plate.

Bake in 400 degree F oven for 25 to 30 minutes, or until golden brown.
