Recipe(tried): Crock Pot Lemon Chicken

Crock Pot Lemon Chicken

6 large pieces of chicken (or more if using smaller pieces)
1 12 oz can frozen lemonade, thawed
3 Tb. cornstarch
4 Tb. brown sugar
3 Tb. cold water
1/2 cup ketchup
2 Tb. vinegar

Arrange chicken pieces in crock pot. Combine lemonade, brown sugar, ketchup and vinegar and mix well. Pour over chicken. Cover. Cook on high 4 hours or on low 6-8 hours. Transfer liquid from crock pot to saucepan. Skim fat; combine cornstarch and cold water and add slowly to liquid, while stirring over low heat. When thickened, serve with chicken over hot rice. Serves at least 6

Serving suggestion: serve with: salad of lettuce leaves, mandarin oranges, red onion rings and poppy seed dressing, hot rice, stir fried vegetables, almond cookies or fortune cookies
