MEXICANA PORK CHOPS

4 pork chops -- or pork
steaks or country ribs
1/3 c. chopped onion
1 can cream of chicken soup
1/2 pkg. taco seasoning (1 1/2Tbsp)

Trim all excess fat from pork chops. Saute onions in a large frying pan; remove and set aside. Brown pork chops in frying pan, placing in a casserole dish when browned. Stir 1/2 c. water into drippings in pan, stir in undiluted soup, taco seasoning and onions. Pour soup mixture over pork chops in casserole dish. Bake uncovered in a preheated oven 350 deg. for 1 hr. Meanwhile, cook rice and serve with chops.

MOM'S HAMBURGER STEW

1 pkg. lean gr. beef (1-1 1/2 lbs)
3 c. water
1 Tbsp. heaping -- beef dip mix
1 bay leaf
1 small onion -- diced
3 diced carrots
3 diced potatoes
1 dash garlic powder
1 squirt ketchup
1 c. frozen peas
1 c. chopped broccoli -- (opt)

Brown ground beef, in fry pan or heavy pot and drain off grease. Place everything except frozen veggies and broccoli in a large pot, add more water if needed (but remember, you are not making soup). Bring to a boil, and simmer 20 min or so. Add the broccoli and frozen veggies for the last 5 min. Mix some water and four together (1/4 f. to 1 c. water) and return stew to a boil, while stirring, pour in the liquid flour mixture to thicken it, a bit at a time, you might not need it all. Remove bay leaf and serve with toast and a glass of milk.

SLOPPY JOE'S

1 1/2 lbs. gr. beef

2 Tbsp. vinegar
1 Tbsp. br. sugar
1/4 c. water
1 tsp. powdered mustard
1 tsp. salt
2 c. chopped
1/4 c. chopped onion
2 Tbsp. chopped gr. pepper
1 c. catsup
1 Tbsp. lemon juice

Fry meat in frying pan, breaking it up and cooking until no longer pink. Drain off the grease. In a med. pot, mix all the other ingredients and add the meat to that. Simmer for 15 - 20 min. Serve on hamburger buns. Add cheese slices if desired. Serve with potato chips and fresh fruit chunks.

NOTES : This has been in our family for years. It was originally as a hot lunch in Seattle Schools!
