Recipe(tried): Oven Fried Chicken Parmesan

This is an old favourite of mine from way back. Quick, easy and ingredients are always on hand.

Serves 4
Preparation 10 minutes
Cooking: 35 minutes

OVEN FRIED CHICKEN PARMESAN

1 cup soft fresh breadcrumbs
1/3 cup grated Parmesan cheese
2 tablespoons finely chopped parsely
1/2 clove garlic peeled and finely chopped
1 teaspoon salt
1/4 teaspoon black pepper
3oz butter or margarine, melted
2-3 lb chicken pieces

Preheat the oven to 400F. Butter a large baking dish. In a shallow bowl, combine the breadcrumbs, cheese, parsely, garlic, salt and pepper. Place the melted butter in another shallow bowl. Dip the chicken into the butter then roll the pieces in the crumb mixture and put them into the baking dish.

Pour the remaining butter evenly over the chicken and bake, uncovered, for 35 to 40 minutes, basting occasionally with the pan juices.
