Recipe(tried): Crock Pot Swiss Steak (using diced tomatoes and gravy)

This was on the menu for us last nite along with a big tossed salad and "almost" Bojangles biscuits (which in my opinion taste just like the ones made by Bojangles. We dont have a Bojangles by us anymore so I need to bake them if I want a biscuit fix).

CROCKPOT SWISS STEAK
Serves 6

1 1/2 lbs beef boneless round steak
1/2 tsp peppered seasoned salt
6 to 8 new potatoes, cut into fourths
1 1/2 cups baby carrots
1 medium onion, sliced
1 (14 1/2 oz) can diced tomatoes with basil, garlic & oregano, undrained
1 (12 oz) jar home style beef gravy

Trim excess fat from beef. Cut beef into 6 serving pieces. Spray 12 inch skillet with cooking spray; heat over medium high heat. Sprinkle beef with seasoned salt and cook beef in pan until brown (about 8 minutes).

Layer potatoes, carrots, beef, and onion in crock pot. Mix tomatoes and gravy; spoon over beef and vegetables.

Cover crock pot and cook on LOW setting 7-9 hours or until beef and veggies are tender.

Note: My crockpot must be turbo or something - lol, because I used these exact proportions and it was cooked to perfection in 6 hours. Check early rather than the "suggested" done time, especially if you have a new crockpot (as mine is and I am getting used to how long it really takes to cook things in it).
