Recipe: Crunchy Fig Newton Chicken Salad Roll-ups

Wanted to post something, so reached into my basket full of a year's worth of unfiled recipe clippings....here's what I pulled out! It comes from the newspaper and says it's adapted from Kraft. It states that it sounds weird, but the crumbled cookies give the salad a hint of sweetness, sort of like raisins.

Crunchy Fig Newton Chicken Salad Roll-Ups

2 packages (6 oz. each) grilled chicken breast strips, chopped
1 medium apple, chopped
6 Fig Newton cookies, chopped
1/3 cup mayo
1/4 teaspoon salt
1/4 teaspoon pepper

Combine all ingredients in a blender or food processor and pulse until well blended. Cover and refrigerate at least 1 hour to allow flavors to blend. Serve alone, or as a filling for sandwiches or lettuce wraps. Makes 5 servings.
