Recipe: Crunchy Pea Salad with Dill Dressing (using water chestnuts and cashews)

CRUNCHY PEA SALAD

1 cup frozen peas
1 can sliced water chestnuts
1/2 cup celery, chopped
1/4 cup cashews
3 to 4 green onions, sliced
FOR THE DILL DRESSING:
1/4 cup non-fat mayonnaise
1 tsp. lemon juice
1/4 cup non-fat sour cream
1 tbsp. fresh dill (or 1 tsp dried dill)

Thaw peas under hot water.

In a salad bowl, mix together peas, water chestnuts, celery, cashews, and green onions.

Beat the dill dressing ingredients together then add to salad bowl.

Makes 4-6 servings
