Recipe(tried): Crustless Spinach Quiche for Noreen

Breakfast and Brunch
This is not the recipe you are looking for~I don't think...but I thought maybe you would like to try it...

Crustless Spinach Quiche

1 large onion, chopped
1 Tbsp oil
10 oz spinach~frozen
5 eggs
12 oz Muenster~shredded
1/4 tsp salt
1 dash black pepper

Thaw and press spinach dry. Preheat oven to 350. Saute onion in oil in large skillet until tender. Add spinach and cook until exvess moisture evaporates; cool. Combine eggs, cheese, salt and pepper; stir into spinach mixture. Pour into greased 9 inch pie plate. Bake 30 minutes, until set.
