Replace shrimp with chicken, I made this 2 days ago with chicken and it was perfect! Just add a little more of the blackened seasoning at the end!
DAVE AND BUSTER'S CAJUN SHRIMP ALFREDO
10 oz large shrimp, peeled and de-veined
2 to 3 tablespoons + of Paul Prudhommes Blackened Poultry Magic
3 tablespoons of olive oil or clarified butter
1 1/2 cups mushrooms, chopped
2 teaspoons fresh minced garlic
3/4 cup diced tomatoes
1 cup heavy cream
1 cup Fresh Romano, Asiago, or Parmesan cheese, grated.
1 egg yolk
Green Onions, chopped
Linguine or Fettucine (buy the Italian-made stuff)
Get a pan of boiling salted water ready for your pasta. Get all your sauce ingredients ready and laid out on a plate ready to cook.
When you've got all your ingredients ready, cook your pasta and make your sauce while your pasta is cooking.
Toss the shrimp in 1 tsp. blackened poutlry magic seasoning.
Heat a skillet with olive oil, then add shrimp. Saute for 1 minute until the shrimp is pink. You may need to turn it a couple times.
Add the mushrooms and cook with shrimp for a couple of minutes.
Add the garlic and tomatoes.
Add cream and 1-2 tsp of Poultry Magic to taste. Bring to a simmer. Add the cheese, yolk, and green onion. Toss over medium heat until the sauce thickens. Garnish with more diced tomatoes and green onions.
Serve with Foccaccia or garlic bread
