Recipe: Rice Cubes with Satay Sauce (appetizers)
Appetizers and SnacksRICE CUBES WITH SATAY SAUCE
FOR THE RICE CUBES:
5 1/4 cups water, divided use
2 1/2 cups uncooked rice
1 teaspoon salt
FOR THE SATAY SAUCE:
3/4 cup crunchy peanut butter
2/3 cup plain low-fat yogurt
1/3 cup chopped green onions
1/4 cup lemon juice
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon ground ginger
1/2 teaspoon ground red pepper (cayenne)
TO PREPARE THE RICE:
Combine 5 cups water, rice, and salt in large saucepan; bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until rice is tender and liquid is absorbed. Do not stir.
Line 8x8x2-inch baking pan with plastic wrap; spread cooked rice evenly in pan. Cover with second piece of plastic wrap. Using bottom of another 8x8x2-inch baking pan, firmly press down rice. Remove empty pan; chill until rice is cold and firm.
TO MAKE THE SATAY SAUCE:
Combine peanut butter, yogurt, onions, lemon juice, remaining 1/4 cup water, honey, soy sauce, ginger, and pepper in small bowl; stir until smooth. Cover and chill until ready to serve.
WHEN READY TO SERVE:
Remove plastic wrap from rice; invert pan. Remove plastic wrap lining; using a sharp knife, cut rice into 1-inch squares. Serve with sauce.
Makes 64 (1-inch) cubes
