Recipe: Deep Fried Sweet Spanish Onion Rings

DEEP FRIED SWEET SPANISH ONION RINGS

Tempura-like batter makes these delightfully crisp.

2 to 3 large sweet onions
1 1/2 cups ice water
1 extra large egg yolk
1 1/2 cups flour
1 1/2 tbsp cornstarch

Slice onions into thin slices and separate into rings; cut larger rings into halves.

Heat oil in deep fryer to 375 degrees.

Beat ice water and egg yolks in a large bowl. Add flour and cornstarch all at once; stir briefly with a fork, just to combine. Batter will be lumpy, DO NOT overmix.

Add onion rings to batter; stir to coat well. Remove rings letting excess batter drain off; stack rings in the basket of the deep fryer.

Place basketful of rings into hot oil and fry until crisp and golden. Remove from oil and drain on paper towels.

These are meant to come out in one block, molded to the shape of the basket they're fried in. Serve on a platter and pull them apart as you eat.
