Recipe: Dips - sour dough beef, spinach, layered mexican, pineapple macadamia

Pineapple Macadamia Dip

2 pkgs (8 oz) cream cheese
1/3 cup crushed pineapple
1/4 cup shredded coconut
1/2 cup chopped macadamia nuts.

Serve with crackers, fresh veggies,or fresh fruit (apples, etc.)

LAYERED MEXICAN DIP

2 avocados, peeled and seeded
2 T. lemon juice
2 T. medium or hot picante sauce
2 T. grated onion
2 1/2 cups regular or fat-free sour cream
16 oz. fat-free spicy black bean dip
2 tomatoes, chopped (about 3 cups)
6 scallions, chopped, including tops
1 1/2 cups sliced pitted black olives
8 oz. regular or low-fat Cheddar cheese, grated
Tortilla chips

Beat the avocados with the lemon juice, picante sauce, grated onion, and 1/2 cup sour cream until the mixture is smooth to make a guacamole. Set aside. Using 2 large platters or 2 9 X 13-inch pans, place half of the bean dip into the bottom of each pan. Carefully smooth half of the guacamole on top of each bean layer (about 1 cup on each layer). Place 1 cup of the sour cream on top of each guacamole layer.

Layer half of the tomatoes, half of the scallions, half of the olives, and half of the grated cheese into each pan.

Chill the platters and serve them with tortilla chips.

Makes 24 servings.

SPINACH DIP

1 package frozen chopped spinach, thawed
and squeezed dry
1 package Knorr vegetable dry soup mix
1 small onion, minced
l can water chestnuts, drained and chopped\
l cup mayonnaise
1 cup sour cream
Mix all ingredients together and refrigerate for at least 2 hours. Good with pieces of bread, chips or crackers.

This is also nice when served inside a round bread shell. Slice top off bread round and
hollow out, carefully, making sure there are no weak places in bread shell. Fill bread shell with the dip shortly before serving. Serve with the bread removed from inside the bread loaf.

Sour Dough Beef Dip

1 pk 8 oz. cream cheese
1 c Sour cream
1 pk 4 oz. chipped beef, chopped
1/4 c Green onions, finely chopped
ds Worcestershire sauce
2 tb Green peppers, chopped
1 8-inch round loaf of sour dough bread

Mix the ingredients well except bread.

Slice top off bread round and
hollow out, carefully, making sure
there are no weak places in bread shell.

Fill bread shell with chipped beef
mixture and put top back on. Wrap in
foil and bake at 350 degrees for 1-1/2 hours.

Use soft bread from interior
of the loaf to dip into hot mixture.

Bread can be toasted. Crackers can
also used to dip up mixture. Serves 12
