Double Apple Cake

2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cardamom
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. salt
3 eggs
3/4 cup brown sugar, packed
3/4 cup sugar
1 cup vegetable oil
2 cups shredded cooking apples*
1/2-1 cup chopped walnuts
4 cups thinly sliced cooking apples

Combine flour, baking soda, baking powder, spices and salt. Beat eggs and sugars together, till well mixed. Continue beating as you slowly pour in the oil. Add dry ingredients, beating to mix thoroughly. Stir in shredded apples and nuts. Arrange sliced apples in bottom of buttered 13x9-inch baking pan. Pour batter over sliced apples. A few apple slices may be sprinkled over top of batter if desired. Bake in a 350 degree oven for 1 hour. Serve with whipped cream if desired.

*Winter pears may be used instead of apples.
