Recipe: Double Chocolate Brownies

Double Chocolate Brownies

For those of you who really love chocolate here is a wonderful brownie recipe.

2 oz. unsweetened chocolate, coarsely chopped
8 Tbsp. butter
1 cup sugar
2 large eggs
1 tsp. vanilla extract
3/4 cup all-purpose flour
pinch of salt
2/3 cup milk chocolate chips

Preheat oven to 350F. Grease an 8-inch square pan. Melt chocolate and butter in the top of a double broiler over hot water. Stir until smooth. Remove from the heat and cool slightly. Add the sugar and eggs. Whisk until well blended. Whisk in the vanilla. Add the flour and salt and stir till well blended. Stir 1/3 cup of the milk chocolate chips into the batter. Scrape the batter into the pan. Sprinkle the remaining milk chocolate chips over the top. Bake for 25 to 30 minutes, until a toothpick inserted into the center comes out almost clean. Take out and let cool.
