This is a great strawberry muffin recipe I got off the Web (the site was www.whitelily.com). I am a caterer and we also have coffee shop. I make the jumbo muffins ( 6 out of one batch)and I can't keep them for long.
Double Strawberry Pecan Muffins
2 cups White Lily Self-Rising flour
1/4 cup sugar
2 eggs
1/4 cup butter or margarine,melted
1/2 cup strawberry yogurt
1/2 tsp. vanilla
3/4 cup chopped pecans,divided
3/4 cup strawberry preserves
1 1/2 tsp. sugar
Preheat oven to 375 F. Grease 12 regular size or 6 jumbo size muffin tins.
In a large bowl, combine the flour and sugar,mix well.
Combine eggs,butter or margarine,yogurt and vanilla; blend well using a whisk.
Add egg mixture to flour in large bowl, stirring just until moistened.
Gently fold in 1/2 cup pecans and the strawberry preserves.
Spoon batter into prepared tins. Sprinkle tops evenly with remaining pecans and sugar.
Bake for 20-25 minutes or until golden brown.
** I find that 1/2 cup yogurt isn't enough to moisten the flour. I always add about 1/4 cup more. I also found that the store brand of yogurt was just as good as the Brand names and was cheaper.
