MEATBALLS SUPREME
3 slices bread
1/2 cup milk
1 egg, beaten
1 pound ground beef
3 tablespoons grated onion
3 tablespoons snipped fresh parsley
1 teaspoon salt
1/8 teaspoon ground black pepper
Flour (as needed)
2 tablespoons shortening
2 cups tomato juice
1 cup water
1/2 cup chopped carrots
1/2 cup chopped celery
1 teaspoon Kitchen Bouquet (optional)
1/2 teaspoon salt
Hot cooked rice or mashed potatoes (for serving)
Soften bread in milk; add egg and set aside.
Mix ground beef, onion, parsley, salt and pepper. Combine bread and meat mixtures; form into 18 balls; roll in flour.
In skillet, brown balls in hot shortening; drain off excess fat.
Adds tomato juice, 1 cup water, carrots, celery, Kitchen Bouquet and salt. Cover; simmer 45 minutes.
Serve sauce with hot cooked rice or mashed potatoes.
Makes 6 servings
