DRESSING FOR SILKEN TOFU
FOR THE DRESSING:
2 1/2 tablespoons light soy sauce
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh ginger
2 tablespoons chopped scallions
2 tablespoons malt vinegar
1/4 teaspoon chili oil
dash of sesame oil
FOR THE TOFU:
1 (10 ounce) package silken tofu, chilled
ground Sichuan peppercorns
sea salt
Combine ingredients for the dressing and pour over tofu.
Cut chilled tofu into 8 thick slices. Sprinkle with ground Sichuan peppercorns and sea salt.
Serves 4
