Recipe(tried): Dressings

Salads - Salad Dressings
Hi Janice,

Here are two recipes I've tried (the Onion Salad Dressing and the Soy Sauce Vinaigrette), and two I haven't (the Carrot Salad Dressing and the Miso Dressing).

A little bit of red cabbage and shredded carrots would be a nice addition to plain lettuce for the salad.

Susan, Hawaii

Onion Salad Dressing
Serves 4

3 tablespoons rice vinegar
2 tablespoons salad oil
1 tablespoon soy sauce
1 tablespoon grated onion
2 teaspoons mirin (or substitute apple juice)
1 teaspoon sake
few drops of sesame oil

Whisk all ingredients together.

Soy Sauce Vinaigrette
Serves 4

1 tablespoon soy sauce
1-1/2 tablespoons rice vinegar
3 tablespoons salad oil

Whisk together soy sauce and vinegar. Slowly whisk in oil.

Carrot Salad Dressing

2 cloves garlic
1/2 onion, cut in chunks
1 carrot, cut in chunks
2-1/2 tablespoons grated ginger
1/2 teaspoon powdered mustard
2 teaspoons soy sauce
2 teaspoons apple juice
1 teaspoon sesame oil
3/4 cup to 1 cup salad oil
1/2 cup apple cider vinegar

Combine garlic, onion, carrot, ginger, and mustard in a food processor and process 30 seconds (or until carrots are very finely chopped. Add remaining ingredients through the feed tube while processing. Transfer to a saucepan. Bring to a boil, then let cool before using.

Miso Salad Dressing
Makes 1 cup

4-1/2 tablespoons miso
4-1/2 tablespoons honey
3 tablespoons rice vinegar
3 tablespoons prepared mustard

Combine all ingredients, mixing until smooth.
