Recipe(tried): Easy Lentil Soup (no meat)

Here's a very easy soup recipe that I use a lot--feeds many, and I don't think it has any of the allergens you mentioned. I hope the family likes lentils, though!

EASY LENTIL SOUP


1 bag lentils (use store brand)
3 quarts water or vegetable broth
1 medium onion, chopped
2 carrots, diced
2 stalks celery, diced or sliced
pinch garlic powder
1 bay leaf
salt (to taste)

Rinse over lentils and place in big pot with water and all other ingredients. Bring to a boil, then reduce to a strong simmer and cook for about 1 1/2 hours to two hours, until lentils are very soft and create their own broth. Salt to taste during last half hour of cooking time.

This soup looks kinda gross, but tastes great, is quick and economical.
