Try the Vegetarian Swap board - lots of intersting recipes without eggs, por, and the other items you mentioned that are n-no foods for your friends family. Tofu can be eaten in so many interesting ways. What about pasta recipes? You can have endless variety with pasta and vegetables such as pasta and beans, pasta primavera with only the veggies that one CAN eat. There are also lots of soy produtcs out there these days that are really good like Boca Burgers. Found in veggie swap board also. Good luck!
