Recipe(tried): Easy no-cook dinner tonight - Tuna and White Bean Salad
Menus I hope everyone had a nice holiday weekend!
I fixed dinner for my parents again tonight. They planted 10 tomato plants (there are only 2 of them!) so I try to think of ideas using tomatoes when I plan a meal for them. Decided to make an easy favorite of mine.
Tuna & White Bean Salad
Serves 4
3-4 TBL fresh lemon juice (from 2 lemons)
2-3 TBL olive oil (or to taste)
2 cloves garlic, crushed and very finely minced (or to taste)
3 TBL minced fresh basil (or 1 TBL dried)
salt and lots of freshly ground pepper
2 (7-oz.) cans tuna, drained
1/3 lb. green beans, cooked, cooled, and cut into 1-inch pieces
1/2 cup slivered red onion (or to taste)
1 (15-oz.) can white beans (cannellini or navy), drained and rinsed
Optional: sliced celery, fresh parsley
To serve: one medium-sized tomato per serving
Mix first 5 ingredients in small bowl. In a larger bowl, flake tuna and mix in green beans and onion (and any optional ingredients). Toss with 1/2 of the dressing. Add white beans to bowl with remaining dressing, and toss gently to combine so as not to mash white beans.
To serve, core and cut each tomato into wedges without cutting completely through the bottom, placing on plate and opening into a "flower" shape (place on top of salad greens, if desired). Mound the tuna salad in the center of the tomato.
Serve with garlic bread topped with basil and parmesan cheese and lightly toasted under the broiler.
