Recipe: Cool Cucumber Tomato Salsa (using lemon juice)

COOL CUCUMBER TOMATO SALSA

"Here's a salsa recipe that's excellent with grilled fish, scallops or shrimp or as a dip with tortilla chips."

2 cups seeded, diced Roma tomatoes
1 peeled, seeded chopped cucumber
2 tablespoons minced fresh cilantro
1 tablespoon minced red onion
1 tablespoon fresh lemon juice
1 jalapeno pepper, seeded and minced
1/4 teaspoon salt

Mix all ingredients together in a medium-size bowl. Cover and refrigerate for a few hours to meld the flavors.

Serve at room temperature for best flavor.

Makes 2 1/2 cups salsa
