EGGPLANT STEAK
1 firm large eggplant
3 tablespoons grape seed oil
1/4 cup hummus
4 oz. cooked minced fresh spinach (or frozen, thawed and well drained)
1/2 small diced tomatoes (or roasted pepper)
4 oz. feta cheese, crumbled or blue, parmesan or mozzarella
Salt and freshly ground black pepper (to taste)
Cut stem off, Slice (leave skin on) eggplant cut lengthwise into 1 1/2-inch thick slices. Soak for 1 hour in a salt water solution. Than pat dry, brush with oil.
Prepare the grill so that the temperature is hot or broiler for 1-2 minutes on each side do not over cook. Remove from heat.
Top with hummus, spinach, tomatoes, cheese and salt and pepper.
Heat in oven (400 degrees F) for 10 minutes, or until hot or cheese start to melt.
Serve immediately. Enjoy.
