Main Dishes - AssortedA ROAST REVOLUTION!
Source: Kraft: What's Cooking, Festive 2000
Remember when roasts were reserved for special occasions? Using our revolutionary new method, you can now prepare a tender, juicy beef, pork, chicken or turkey roast in an hour. Any night of the week.
Kraft Kitchens expert Susanne Stark took up the challenge to revolutionize roasts. When she rolled up to the supermarket checkout with her cart piled with raw meat, she got some interesting looks. "The cashiers were polite," she says, "but I could tell they really wanted to know what I was up to."
Back in the Kraft Kitchens, Susanne read hundreds of cookbooks and magazines from allover North America. Then she roasted different cuts of meat at various temperatures -at one point she had six ovens going at once!
Susanne discovered that SHAKE 'N BAKE Coating Mix seals in the meat's juices and provides all the seasoning you need. It also lets you roast at a higher temperature. By using this secret ingredient and following Susanne's recommended cuts and cooking time, you can now make a flavorful roast any night of the week in one hour!
EVERYDAY ROASTS
Serves 4-6
ROAST PORK
COAT pork (2 lb centre cut pork loin roast) in 1 pkg SHAKE 'N BAKE Pork Coating Mix using a large plastic bag. Place coated meat in roasting pan and roast at 400 degrees F for 60 minutes to an internal temp of 160 degrees F: Larger roasts may take a few minutes extra.
ROAST CHICKEN
COAT chicken (3 lb whole chicken) in 1 pkg SHAKE 'N BAKE Original Crispy Coating Mix using a large plastic bag. Place coated chicken in roasting pan and roast at 400 degrees F for 60 minutes to an internal temp of 160 degrees F or until juices run clear.
ROAST BEEF
COAT beef (2 lb top sirloin roast) in 1 pkg SHAKE 'N BAKE Teriyaki Glaze Coating Mix in a large plastic bag. Place coated beef in roasting pan and roast at 350 degrees F for 60 minutes to internal temp of 145 degrees F for medium rare. Larger or more well-done roasts may take a few minutes more. Susanne recommends you serve beef medium rare for tender, juicy and flavorful meat.
ROAST TURKEY
COAT turkey (2 lb bone-in turkey breast) in 1 pkg SHAKE 'N BAKE Southern Fried Coating Mix using a large plastic bag. Place coated turkey in roasting pan and roast at 400 degrees F for 60 minutes to an internal temp of 160 degrees F. Cover turkey breast with foil for first 30 minutes of cooking time.
KRAFT KITCHENS QUICK TIPS
-To serve a crowd, cook two smaller roasts. They cook in the same amount of time and you'll have twice the meat.
-Use your meat thermometer to check for doneness. If it's hard to read in the oven, mark the correct temperature with a paper clip.
-If you can't find a 2 lb roast, ask the butcher to tie one up for you.
-If you don't have a roasting pan, a 9x13 inch pan works.
-Roast potatoes at the same time. Just chop 4 potatoes into cubes and microwave on HIGH for 10 minutes. Then place alongside your roast. Carrots, sweet potatoes and squash work, too.
