Recipe(tried): Famous Fudge (using evaporated milk and mini marshmallows)
Desserts - Candy, ChocolateI have tried many recipes for fudge and 'Famous Fudge' always turns out great (as long as it's not raining). For sugar free, or almost, use 1/3 sugar and the rest Splenda or store brand (Kroger's works). Hubby is diabetic and can't tell a difference. Cook at a full rolling boil for 5 minutes. Can be doubled. Best fudge ever!!
*FAMOUS FUDGE
2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1/2 cup chopped nuts (optional)
1 1/2 cups sugar
2/3 cup evaporated milk
2 tbsp. butter or margarine
1/4 tsp. salt
1 tsp. vanilla
Place marshmallows, chocolate chips and nuts in a bowl; set aside.
Combine sugar, evaporated milk, butter and salt in a large saucepan. Bring to full boil over medium heat; cook 5 minutes.
Remove from heat and add vanilla and reserved marshmallow mixture. Stir till all marshmallows are melted.
Pour into a buttered 8-inch square pan. Cool and cut.
Makes about 2 lbs.
