FARMER'S MARKET COBBLER
1/2 cup butter
3/4 cup flour; all-purpose
1 1/2 cups sugar, divided use
1 tsp baking powder (heaping)
1/2 tsp salt
2/3 cup milk
1 quart fresh or frozen fruit (blueberries, peaches, apricots, blackberries, pears or apples)
Preheat oven to 400 degrees F.
Melt the butter in a 2-quart baking dish.
Combine the dry ingredients, reserving 1/2 cup sugar. Stir into melted butter in the baking dish. Add the milk and stir again.
Bring the fruit and 1/2 cup of sugar to a boil. As soon as it boils, remove from the heat and pour over the batter. Don't stir.
Bake at 400 degrees F for 30 minutes.
Servings: 8
