My mom and I have been making this cobbler for years. I call it the "cuppa" cobbler. When making it for a large gathering I usually use 3 cups of each of the ingrediants.
I have experimented (with raving success) with adding chopped pecans and small chunks of cream cheese. Sometimes I stir it into the peaches and sometimes I put the pecans in the crust and then dot the cream cheese on top.
I have also made this cobbler with fresh pears (my mom has a pear tree). I cook the pears in a sugar and cornstarch mix and use in place of the peaches.
