Fat Free Chocolate Mousse
rec.food.recipes/Jia and Accolan/2000
8 oz. container of Cool Whip Lite
8 oz of fat free cream cheese (the name brands tend to taste better than the store ones)
8 oz of fat free sour cream I prefer breakstones for flavor
1 pkg of fat free/sugar free instant chocolate pudding
1 tsp of vanilla
additional sugar/nutrasweet to taste (if needed)
Simply blend all together with an electric beater and let sit in the 'fridge at least a few hours.
You can serve this as is. As a pie (just spread into a prepared cracker crust)
Or our favorite way:
Serve the mousse with fat free graham crackers and fresh fruit (such as peaches and strawberries) for dunking.
One of the things I like about this recipe is that its very versatile -leave out the pudding mix and its a fat free substitute for cheesecake or you can add different varieties of pudding such as vanilla butterscotch or white chocolate and make a different dessert every time.
You can even add regular sugar free jello mix to it to make something like strawberry fluff, a pseudo "key lime" cheesecake etc.
